My choice of gin today is, the West Australian gin The West Winds- The Sabre
No longer is the Margaret River region of WA renowned for only it’s wines, but now also it’s award winning gins. The West Winds guys use triple filtered rainwater from Margaret River in the distilling process, making this a true blue home grown gin in more ways than one.
The Sabre is made lovely and creamy by the addition of toasted Australian wattle seed which is a signature botanical for this gin. Coupled with lemon myrtle and garnished with lemon and served with a Mediterranean tonic, this for me is the perfect way to end this sunny Mancunian day.
My parents immigrated to the West Coast of Australia in 1974 so it is a pleasure to pour this gin and spend sometime thinking of a childhood growing up in WA, with sea spray on my legs, and the smell of wattle in the air.
